Coconut Matcha Chia Pudding by Nutrition by Alexa

I am SO grateful to the amazing Nutrition by Alexa for creating the most delicious coconut matcha chia pudding for the perfect post-pilates snack!

The world renowned sports nutritionist Dr Stacy Sims recommends having some protein, carbohydrates and caffeine before exercise to enhance performance and improve recovery.

The matcha in this chia pudding gives a steady release of energy instead of the energy spike you get with coffee. This will help to give you sustained energy during your workout and won’t give you the jitters or an energy crash afterwards!

The macros for this meal are (per portion): Carbs 17g, Protein 25g, Fat 12g, 285 kcals.

INGREDIENTS

(serves one)

15g chia seeds

180ml coconut milk (I used Plenish unsweetened)

1tsp matcha powder

1tsp desiccated coconut

1 serving vanilla protein powder (giving 20g protein) (I used Free Soul vegan protein powder)

METHOD

1) Measure out the milk and add the matcha and protein powder then whisk together.

2) Add the chia seeds and desiccated coconut, and stir.

3) Pour into a bowl or cup and chill for 4-6 hours or overnight.

4) Serve with berries (optional).
